Go Ahead—Cook with It

别怕—就用它来烹饪

It's grapefruit season. From now through March, the golden orbs are ripe for the picking. And they're not just for breakfast any more.

Hanging around on trees all about California: grapefruit—heavy with juice, tartly sweet, beguilingly perfumed.Round and yellow as happy faces or suns, they seem to ripe just as the general populace sinks into its annual round of post-holiday dietary self-chastisement.

Coincidence? Perhaps. But we say run with it.

Look beyond the obvious salvo of half a grapefruit for breakfast attacked with a jagged spoon and you'll find a marvelous fruit for peeling and eating out of hanD.There's nothing like it for inducing simultaneous feelings of gastronomic piety and delight at recapturing a long-lost pleasure. It's sensual: the aroma of essential oils as they spurt daintily from the pores of the thick skin, the ripping sound of the tenacious segments being pulled apart, the juice dripping down. And it's delicious.

But don't stop there. Cook with grapefruit. Use its juice to flavor sauces. Section and scatter it. Bake with it. Candy its peel. Grapefruit is milder and sweeter than lemon, but it can be used in many of the same ways—squeezed on grilled fish, made into a brightly flavored curD.And if you're looking for gorgeous color, red grapefruit offers extra plate appeal.

The notion that red grapefruit is sweeter than white or yellow grapefruit is, however, a myth, according to citrus specialists. (The story grew out of a marketing campaign by Texas growers. ) Red grapefruits get their color from lycopene, which has health benefits (its an antioxidant)but does not affect flavor.

Sweetness is determined, rather, by the length of time the fruit has been hanging on a tree. A grapefruit picked in December isn't as sweet as one picked in February, so if you have a tree, just pick fruit as needed.

If not, ask at your farmers market about the different varieties available, all of which have their fans. California reds include the medium-pink Rio Reds from the Caochella Valley and the Star Ruby from Central Valley (and Texas). Yellow Marsh is a familiar yellow variety and the Duncan, while not usually labeled as such in supermarkets, is a reliable white.

For those who don't like the tartness of a true grapefruit, Oro Blanco—the half-grapefruit, half-acidless pummelo—is sweeter and can be used in salads.

Our salad of jicama strips, thinly sliced snow peas, fresh pea sprouts (available in Asian markets)and red grapefruit sections has an appealing crunch. Its delicately harmonious flavors are pulled together with a faintly sweet dressing of grapefruit juice, tarragon and mint.

The strikingly pink sauce of our baked halibut dish contrasts with the white flesh of the fish for an artful plate—and it's easy to make. Before baking, marinate the halibut in grapefruit juice with garlic and thyme. Sauce it with a reduction of grapefruit juice combined with blood orange juice, which deepens the color and softens the flavor. Then whisk in bits of cold butter for silkiness.

A rich crust is a perfect foil for the tangy grapefruit curd filling in our pretty tartlets. Both grapefruit juice and lemon juice are used in the curd to focus the flavor; grapefruits zest enlivens the crust. Garnish them with whipped cream and candied grapefruit peel.

For cooking, select heavy fruit, which indicates juiciness. (If you're making a batch of candied peel, however, lighter fruit will indicate more peel.) Before juicing, roll a grapefruit under your hand on the countertop to help extract the most juice. Avoid lumpy fruit, which may be over-ripe.

And finally, for those whose resolute January s

A.The grapefruit becomes ripe just after a holiday in a year so that people can consume more food.

B.The grapefruit matures in autumn to provide people with a kind of rich food.

C.The grapefruit can provide people with a kind of favorite fruit when they have been on diet for a few days after the Christmas holiday during which they ate too many rich foods.

D.The grapefruit matures as self-chastisement for people.

Passage Five

On the fourth Thursday of November, every year, Americans celebrate Thanksgiving Day. The day is a national holiday which is set aside each year as a time to give thanks to God for our blessings (祝福).

Legend has it that the first English colonists (殖民者) in Massachusetts (马萨诸塞州) started the custom. According to the story, the Pilgrims~ first winter in the New World was difficult. They had arrived too late to grow many crops, and without fresh food, half of the colonists died from disease. The following spring the Indians taught them how to grow corn. In the autumn of 1621, bountiful crops of corn, beans and pumpkins were harvested. The colonists had much to be thankful for, so a feast was planned. They invited their Indian friends to join them in a large feast to share in the bounties (慷慨) of the land. This is the first Thanksgiving.

The traditional foods of the big Thanksgiving Day meal include roast turkey, cranberries, sweet potatoes, pumpkin pie, and Indian bread puddings.

Since the day is set aside for giving thanks, it has also become a traditional family day. Large dinners with many relatives are common throughout America on this special day.

51. When was the Thanksgiving Day tradition begun?

A. In the 17(上标)th century.

B. On Thursday.

C. Last November.

D. In the 16(上标)th eentury.

Questions 51 to 55 are based on the following passage.

Mothers have known it for years. Give the children a hamburger, and they will love it; spend hours making a home-cooked meal, and they will leave it on the plate. Now French scientists have discovered why. According to researchers near Paris, the brain does not respond well to

unfamiliar tastes. Sensations are not as strong when the mind is struggling to understand messages that come from the tongue. This provides little reason to taste new things.

Human beings are naturally like rats – we are afraid of anything new. If you give rats some food that they have never had before, they will turn their backs on it out of fear. We are the same. It is possible to introduce new foods, but only in the right psychological context, like a birthday. Once the introduction has been made, the fact of having a full stomach

is physically pleasing, so the next time it is easier. However, some foods are more tempting than others. Scientists are sure that we are born with a sweet tooth. This is why children have a natural desire for sugar. Another discovery is how a sense of smell affects our appetite. In one experiment, chemical substances were put on the tongues of human participants. At the same time, air was blown down the participants’noses so they could not smell the chemical substances. As a result, no two people got the same sensation from the same food. Physical,

psychological, and cultural differences shaped the response.

The intensity of feelings about food depends upon knowledge of it. The average student who eats a new dish will have only a cloudy image of it, but for some people whose tongues are trained to appreciate fine differences, they’ll have an exciting experience, much like someone who has a great musical ear. This is why someone who eats hamburgers everyday likes them and becomes a hamburger expert. They can tell the difference between a Big Mac and a Burger King, just like the Japanese can tell the difference between varieties of rice that taste the same to Europeans.

51)Why do children prefer a hamburger to a home-cooked meal?

A . The person doesn’t get the instruction from the brain.

B . The brain doesn’t respond well to unfamiliar tastes.

C . The food made at home is not tasty.

D . Children prefer food that is easy to make.

52)On what occasion are people willing to try new food?

A . When they are happy.

B . When they are hungry.

C . When they have already eaten.

D . When they eat with friends.

53)What causes people to like certain foods but not others?

A . The fact whether they have a sweet tooth.

B . The way how the food is cooked.

C . The differences in people who eat food.

D . The color people see of the food.

54)Why can some people appreciate the fine differences in food?

A . They like to try different kinds of food.

B . They have an ear of music.

C . They don’t eat a lot of food.

D . They know a lot about food.

55)What is an appropriate title for the passage?

A . Why People Don’t Like Unfamiliar Food

B . The Brain That Plays a Role in Our Eating Habit

C . The Factors That Affect People’s Eating Habit

D . The Reasons Why People Can Tell Differences in Food
